a bad case of amnesia.

I sat down at the computer this morning and couldn't even remember what I've been doing since yesterday at this time.  Scary, isn't it?  I actually had to look back through my camera to jog my memory...maybe I was up too late last night.  Bo and I ran some errands yesterday, but the most important thing we took care of was going to the Board of Education to have my name changed to LANSCHE!  This means I'll no longer be "Ms. Collins" at school, but "Mrs. Lansche" which is going to be oh-so-weird for a while.  I'm super excited though because I feel like it's much more official!  We also had lunch at Carolina Bagel before heading back to the house to work on school stuff...yes, again. We made two stops:  1) stopped by the school and I was reunited with two of my most favorite co-workers, and 2) the bakery.  I know, I know.  What a way to ruin a healthy diet, but c'mon, everyone needs a cupcake every now and then to get 'em going right?

After hours (and I do mean hours) of school work, Bo and I did Insanity together.  If you don't know what that is, google it.  It's...well...INSANE.  Unfortunately, I'm suffering from some pretty sore knees right now--thank you years of dancing for that--so I had a hard time getting through it yesterday.  But by the grace of God, I made it.  Hopefully, I worked off the cupcake??

After a much-needed shower, Bo and I started prepping dinner.  It was GLADLY interrupted by a good friend coming by for a visit.  Annabeth's uncle unexpectedly passed away last weekend and she was trying to put a slideshow together for the visitation.  What a hard thing to do, especially when emotions are so high...but between Annabeth, Bo, and I, we got all the pictures scanned and saved to a thumb drive so she could put the slideshow together.  As we were working on the scanning in all the pictures, I couldn't help but think about the book I've been reading, Crazy Love.  The chapter I read yesterday morning is titled, "You might not finish this chapter."  The author speaks of how fragile life is, and how little control we have over our brief time on this earth.  I think that, in some small way, everyone knows this to be true.  But the author challenges us:  "We have to realize it.  We have to believe it enough that it changes how we live" (p. 51).  Does that step on your toes the way it steps on mine?

Back to dinner.  Dinner consisted of salmon, steamed broccoli, whole wheat pasta with pesto, and...drum roll please...SWEET POTATO BISCUITS.  If you're expected a regular ol' biscuit, these aren't for you.  But if you love sweet potatoes like I do, and you're up for trying new treats, you should definitely try these.  I found the recipe through one of my favorite blogs, Sous Style.



Sweet Potato Biscuits

Ingredients:


  • 1 large (or) 2 small sweet potatoes
  • 2 tbsp. milk
  • 1 1/2 cup all-purpose flour
  • 2 tbsp. sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 stick cold cold unsalted butter, cut into small pieces

Directions:

1.  Preheat your oven to 425 degrees.

2.  Cook sweet potatoes 6-8 minutes in the microwave until they are done.  Cool slightly, then halve lengthwise and discard skin.  Puree sweet potato in a food processor.  Transfer 1 cup of puree to a bowl and stir in the milk.  Chill until cold, about 30 minutes.

3.  Grease a large baking sheet or line with parchment paper.

4.  Whisk together flour, sugar, baking powder, and salt in a large bowl.  Blend in butter with your fingertips until mixture resembles coarse meal.  Add sweet potato mixture and stir just until a dough forms.

5.  Drop dough into equal mounds on baking sheet.  Bake until lightly browned and cooked through, approx. 18-20 minutes.

I have SO much to get done before we leave this afternoon.  I'm super excited to head to Georgia with Bo, my sisters, and my mom to visit family!  We are also taking a trip to SIX FLAGS on Saturday with the girls :)  Pray for safe travels please!  Happy Thursday!
